Yeoncheon_Bori Bossam

Rare Swedish salmon dish that you can taste in Jeongok Market




Gravlax is fresh salmon marinated with dill, beet, salt and other ingredients. It is a popular dish in northern European countries such as Sweden and Norway, but is next to impossible to taste it in Korea, even in famous restaurants in Seoul. However, in Yeoncheon's Jeongok Market, there is a restaurant that serves this dish. It is Bori Bossam that apparently looks like an ordinary restaurant that is often seen in a traditional market, but the atmosphere inside is somewhat unusual. Behind the tables where the bossam (vegetable wraps with pork) would be placed is a collection of unique contemporary art works.




Bori Bossam is a restaurant that Yun Yeong-cheol, the owner who majored in art and worked as a designer in New York, opened after returning to his hometown. He built this restaurant in the market where his mother worked all her life. Therefore, he wanted to harmonize it with other shops around. So, the menu consisted of barley rice and bossam, and a simple and common interior design was selected.


But one year later, he found that he could not stand long without doing what he liked. Now, instead of bossam, his favorite dishes made with salmon, skewers and octopus have become the main dishes of the restaurant. He learned the recipe of gravlax from a French restaurant chef who was a neighbor when he lived in the US. He purchases the finest chilled salmon from Norway, which has just passed through customs, and prepares it. He mastered the way to disassemble a salmon with the help of the owner of a Japanese restaurant that he frequents and his mother who operated a big fish store in the market. The stew made with salmon's head is also a delicacy of the restaurant.


Many regular customers have become fond of this unfamiliar salmon dish. It is okay if they never remember its name. They just say, "I'll take that red salmon today."
