Cold stuffed cucumber kimchi noodles with sweet and spicy kimchi broth and crisp cucumber

Whenever I am overseas and eat salty and oily meals, there are many times when I seriously miss a piece of spicy and sour kimchi. “Ah, I should have brought some kimchi or gochujang with me.” As I eat something that does not suit my taste, I find solace by writing down the things I would eat first as soon as I return home. Among others, the list always includes tasty naengmyeon, or cold noodles, and yeolmu guksu, noodles in a broth made of young, well ripened summer radish kimchi.



The combination of kimchi and noodles is quite familiar to us but Gaeseongjip in Namyangju presents kimchi noodles that seem familiar but actually quite unique. It is “cold stuffed cucumber kimchi noodles.”


Since it was featured on tvN’s <Wednesday Food Talk>, Gaeseongjip has settled as a must-visit place in Namyangju but, in reality, it was quite well-known even before the appearance on TV; the late President Mr. Kim Young-sam and his wife also once visited the restaurant, which helped it gain national popularity. It has been operated for 27 years since its establishment in 1991, and the most popular menus are cold stuffed cucumber kimchi noodles and North Korean-style dumplings.



Though it seems to be a kind of kimchi noodle or yeolmu guksu, cold stuffed cucumber pickle noodles are a different breed.


A few pieces of cold stuffed cucumber kimchi decorate a red-colored and spicy broth, and the thin, slushy ice brings out a greater flavor of the sweet and spicy broth. When you have a spoonful of the broth, you cannot help but wanting to see the bottom of the bowl. The cold stuffed cucumber kimchi noodles began when the first owner of the restaurant who came from the city of Gaeseong offered a customer a bowl of rice mixed with cold stuffed cucumber kimchi. It was a dish that he had often cooked at home as a snack but, seeing the customers in love with it, he started to sell it after switching rice with noodles.




The steamed dumplings usually ordered on the side of the noodles are also a popular menu that many who visit Gaeseongjip prefer. The dumpling skin made of dough that mixes flour, salt and cooking oil and matured at a low temperature, boasts sticky and gooey texture. Inside the North Korean-style dumplings, meat, salted cabbage leaves, tofu and bean sprouts create a simple flavor. White kimchi offered as a side dish is good with not only the dumplings but also the noodles.



As I walk out of the restaurant after completely finishing my cold stuffed cucumber kimchi noodles and steamed dumplings, I see people coming in ceaselessly.


Taste is a subjective element so what is delicious to me may not be so for others but, when you see a place that everyone loves and waits in line for, the concept of universally “delicious food” just may exist especially since people who have grown on the same soil and eaten similar ingredients and food often share certain preferences in terms of taste.


If you are a Korean, you cannot help but love the flavors of the cold stuffed cucumber kimchi noodles with sweet and spicy kimchi broth and crisp cucumber. It will be one of the first tastes that come to mind whenever you go overseas.
