Suwon’s most popular dumpling restaurant with a long queue
A big bowl of dumpling fillings shows its bottom in an instant. Two employees standing side by side by a window roll out dumpling skin and place fillings in it without rest. There is a long queue of diners in front of the restaurant, so the four hands making dumplings cannot afford to rest. This is the ordinary everyday view of the restaurant that has been unchanged since 1977. These masters of dumplings by the window keep rolling out dumpling skin, stuff it with filling, and put dumplings into steamers.
Boyeong Mandu, located across Janganmun Gate of the Hwaseong Fortress, is a restaurant known to almost every native of Suwon. The representative dish is dumplings and there are various menu options: steamed, kimchi filling, fried and more. The filling does not include glass noodles and the finely ground meat is rich in juice. The thin dumpling skin is chewy and feels so light that you may not feel bloated even after eating many dumplings. Spicy chewy noodles are the most popular dish that accompanies dumplings. The dish includes crispy sliced lettuce, spicy sauce, and chewy noodles that raise your appetite. Spicy chewy noodles go well with all kinds of dumplings and especially, with fried dumplings.
At the time of opening in 1977, the restaurant went by the name "Boyeong Mandu." Since its relocation in 1998, it has been called by its current name "Boyeong Mandu." "Boyeong" is the name of the wife of founder Son Jae-bok. The restaurant has several branches in neighboring areas including Seongnam and Anyang. You can find its branch at the Suwon Baseball Stadium, which is the home stadium of KT Wiz, the professional baseball team of the city.
